The Sgroppino is another classic Italian Prosecco cocktail, whose lemony freshness makes it perfect as an aperitif, palate-cleanser or even as a dessert in its own right. This recipe makes about six cocktails.
1 bottle of chilled Prosecco
240ml vodka, chilled
240ml lemon sorbet
Zest of 1 lemon
A couple of fresh mint leaves or rosemary sprigs (optional)
- Whisk all of the ingredients in a cold, stainless-steel bowl until light and frothy. Be careful not to over-mix, or the mixture will separate.
- Divide among six chilled champagne flutes, garnish with the chopped mint leaves or rosemary (if desired), and serve immediately.
