I was lucky enough to holiday on the island of Rhodes a couple of weeks back and was delighted to find this fantastic beach restaurant called Philosophia in Pefkos (on the eastern coast of Rhodes, just a few miles south of the lovely Lindos). Everything about our visit was wonderful – the fresh food, the welcoming staff and the view, as you can see, was pretty special! An added bonus was the cocktail menu and I was so pleased to see a couple of Prosecco cocktails including this delicious Prosecco Philosophia. I hope you enjoy it as much as I did and have done a few times since my return!
If you’re ever in the area, Philosophia Beach Restaurant is definitely worth a visit!

Ingredients
- Green Chartreuse
- Bitter Lemon or Lemon Tonic if you can find it (Fever Tree do a lovely one)
- Prosecco
- ICE
Method
Add a decent amount of ice to your glass and then pour over a dash of the Chartreuse (best to use a larger white wine glass for this particular cocktail), then fill up to half way with the tonic and top up with Prosecco. You might need to test a few out depending on how much Chartreuse you prefer and ratio of Prosecco to tonic. It’s a tough job but if you want a perfect cocktail, needs must!
