The ‘Lizz’ Prosecco Cocktail

When the temperatures start to soar, you’ll be in need of a refreshing drink to cool you down AND perk you up!  May we present the perfect antidote to hot weather..the Lemon Fizz or ‘Lizz’ Prosecco cocktail!

Ingredients

  • 25ml measure of Gin
  • 3tbsp of lemon syrup (see recipe below)
  • Prosecco

Method

Put the gin and lemon syrup into a cocktail shaker (with a couple of ice cubes if seriously chilled is your thing) and shake well.  Pour the mixture into your glass and top with Prosecco!

Lemon Syrup

  • 3 unwaxed lemons
  • 115g caster sugar
  • 100ml water

Zest the lemons using a vegetable peeler (this way you can more easily avoid the white pith which is bitter) and put in a small saucepan with the sugar and the water  Bring to a very gentle boil and then simmer for 5 minutes.  Leave to cool completely and then strain the liquid.  Juice the zested lemons and add to the syrup for the full lemony effect!  This can be stored in the fridge until needed (and keeps for a couple of days).
