You’ll find the Tenuta Due Castelli winery in Collalto di Susegana, just off the Road of Prosecco that winds through the historic DOCG zone. They make a range of different Proseccos, including a Millesimato Dry and a Prosecco produced using the old Metodo Classico, where the wine is fermented in the bottle rather than the more common steel autoclave.
